Duck and orange pate

EN
Have you ever had any meat leftovers, too less to share and too much to chock it to the bin? There is a great idea to use them, making a tasty and genuine pate. You can use either roast meats or goulash or cutlets.

This pate was made from leftovers of duck breasts and, as you probably know, duck should be cooked rare, so reheating it is not a good idea. From the previous day it was left about 1/2 kg of cooked duck, seasoned with salt and cracked pepper and plenty of duck gravy, which i made with some cranberry sauce and thickened with a teaspoon of cornflour. To make this pate I add 2 large onions, chopped finely and fried on the pan to brown, 3 large eggs, marjoram, 3 large garlic cloves, fresh thyme, and juice from 2 oranges. I blended all the ingredients, including gravy in food processor. The oven was on 180`C and I used loaf tray linen with baking parchment. I baked it for 45 minutes with fan on. Pate should not be removed from the tray until is cold, then it gets hard enouh. Pate should chill in the fridge for a few hours before  you serve it.

Very light almond sponge cake with toffee caramel and raspberries

Sponge cake :)

Ingredients:
4 large free range eggs
1 tsp almond flavour
100g (about 1/2 cub) of caster sugar
4 tablespoons of plain flour
1 tablespoon of potato starch or corn flour
1 flat teaspoon of baking powder

Heat the oven to 180^C, grease and line the tin
Break all the eggs into the bowl and whisk them with a mixer for a while untill they're fluffy and then add the almond flavour and the sugar gradually still mixing until pale. Switch off the mixer and sieve the flours combined with baking sugar. Mix all ingredients gently until they combined and fill the tin using a spatula to remove all the mixture from the bowl. Place the tin in the oven as soon as possible and bake for 25 minutes. Do not open the oven until baked!
If you used a round shaped tin your cake may need longer time to be baked, so check it by lancing with wooden skewer and bake until the skewer is dry.

100 g unsalted butter
Pinch of sea salt
3/4 cup brown sugar
1/3 cup white sugar
1/3 cup double cream

When the caramel is getting thicker add the handful of crushed nuts and keep them in the boiling caramel for a while. The toffee caramel must be thick and sticky but not cristalised.

Once yu take the ready sponge cake from the oven - pour all the caramel on the cake and throw the raspberries over it.

Sourdough rye and wheat bread. No yeasts added

It's been written a lot about benefits from sourdough and I will not discover anything new. The most important benefit of eating sourdough bread is, as for me, a better gluten's tolerancy when the flour is soured and much better working digestive system which makes easier either loosing your weight or just keeping yourself fit.
To breed your own sourdough you need only the ceramic pot, a rye flour and clean water. Making sourdough takes usual 5-6 days and fermentation process intensivity depends of the room temperature. Optimal temperature should be 18 Celsius degrees. So the best place to keep your sourdough is your kitchen!
At the very first day 3-4 tablespoon of rye flour mix with the right amount of filtered water to get a thick pulp (thickeness like a pancake dough). Cover the pot with a linen cloth and leave it to the next day. On the second day add 2 tablespoons of flour and right amount of water and stear the dough properly, cover with the cloth and leave it. Repeat the same step for the next 4 days. Already on the second day you should see a bubbles on the dough and smell the sour. After 6 days sourdough is ready to use it for making the bread.
REMEMBER! A little bit of your bred sourdough leave in the jar and store in the fridge - it will be a "mother" for your next bread. The older is your bacteria culture, the better the next bread is and more precious. My sourdough is 2 years old now but in traditional old bakeries their sourdough is even 20 years old or more!

To make a bread, mix about 3/4 kg of flours (to this bread I used 50/50 rye and wheat), you can aldo add some seeds, dried fruits, raisins, whatever you like. Add some salt and a few spoons of an oil - my favourite is a sesame oil but you can use any oil you like, then you add your sourdough mix and a right amount of warm water to make a thick and little bit sticky dough. Leave it in the warm place overnight. Next day (it needs about 12 hours to grown properly) transfer the dough to the greased loaf tin and bake about 1 hour in 180 Celsius.

The "Mother" you can storage in the fridge safely for months, the low temperature inhibits the growth of bacteria.

Homemade tagliatelle

This tagliatelle I made using the manual pasta maker. This kind of pasta makers are very easy to use, you have your pasta made just before the water is brought to boil. To make pasta you can use the plain flour (type 500) but to achieve the best results you should use rough flour type 450 or semolina flour. You can also mix both flours 50:50. Both of them are different than the plain wheat flour, they're more "sandy" in touch.

To make my pasta I use:
400 g wheat flour type 450
4 large egg yolks
1 whole egg
1/2 tsp of salt
4 tbsp sunflower oil

Knead the dough until it is smooth, very firm and dry - about 10 minutes. Depending on the grind of your semolina (wheat flour), the dough might be more or less smooth. But if it feels sticky, dust your dough and work surface with semolina flour and knead until smooth and firm. If the dough is even a titch too wet, it will stick when you run it through the pasta machine or roll it out.
Ready dough should be rolled asap. Pour about 2-3  litres of  water do the pot, add salt to make it sea water taste, and leave it to boil up. Meantime divide the dough for 8 small balls and roll each one with pasta maker from thick to thin, following the instruction (there are various pasta makers with different adjustments). Leave shets of dough for about 10 minutes before cutting. The sitting dough cover always with cling film or a damp tea towel prevent it drying out.
When you pasta is cut - put it straight to the boiling salted water and cook about 3-4 minutes. Strain it and serve hot on the plate. If you want to store the cooked pasta you must strain it from the boiling water and cold it down with cold water, otherwise it will be still getting softer.

Nugatynki z orzechami pekan i laskowymi zwieńczone rumowo - czekoladowym ganache.

Do zrobienia tych nugatynek użyłam gotowych herbatników digestive, karmelu toffi i skruszonych orzechów pekan i laskowych.

Karmel toffi (masa krówkowa)

Składniki:
100 g masła
Szczypta soli morskiej
3/4 kubka brązowego cukru
1/3 kubka cukru białego
1/3 kubka śmietany kremówki
1/2 kubka wody

Garść pokruszonych orzechów pekan i laskowych

sposób wykonania:

Zagotuj oba cukry z wodą i dodaj wtedy masło i śmietanę.

Rumowo-czekoladowe ganache:

Składniki:
Tabliczka ciemnej gorzkiej czekolady
1 łyżka masła
50 ml kremówki
2 łyżeczki rumu lub 1/2 łyżeczki aromatu rumowego

Sposób wykonania:

Umieść wszystkie składniki w małym rondelku i powoli podgrzewaj, mieszając, aż do uzyskania gładkiej masy.

Smacznego!

Egg and bacon paste mini-tarts /// Mini-tarty z pastą jajeczno-bekonową

The mini tarts are a good idea for stand-up party and you can fill them with a savory pastes, like the above, or make them sweet and fill them up with a mascarpone vanilla cheese or a peanut butter cream. This is always up to you what to use as the filling.
The recipe for my short pastry is a great recipe to remember as is totally unique!

Ingredients (for about 12 mini-tarts)

Dough

3-4 egg yolks hard-boiled and cooled (leave their whites for tarts filling paste)
1 raw egg
125 g unsalted butter moderately hard
1 tbsp sugar
pinch of salt
1 cup (250 - 300 g) plain flour

Paste:

3-4 hard-boiled eggs
1 small onion finely chopped and oil to fry
black pepper to seasoning
2-3 slices smoked bacon, finely chopped

Method:

Short pastry

Crush the cooked yolks in the bowl and add the chopped butter.
Add the raw egg and all dry ingredients.
Try to combine all ingredients using the spoon, avoid touching the dough with hands.
Knead shortly until all ingredients are combined and you are able to form a ball, no longer.
Wrap the dough with the cling film and leave it in the fridge to chill for an hour at least.

Paste:

Peel the eggs and chop them to the bowl, take also the whites from eggs used to make the short pastry. Fry on the frying pan the bacon with onions until brown an add them all to the bowl with eggs. Blend altogether until smooth.

Set the oven to 200^C

Take the dough from the fridge and form it to the cylinder shape, then cut it to 12 equal parts. Each piece of pastry roll roughly using flour for dusting and put them into the ramekins forming such as little pastry bowls. Remember: touch the dough with your hands as little as possible!  Fill each one with the filling in 3/4 deep.
You can also use a muffin tray instead of ramekins.
Bake for 8-10 minutes with the filling together.
If you want to use different fillings you must consider whether you can bake that kind of filling. If not, you must bake just empty tarts and reduce the baking time appropriately.

Enjoy!

.......................................................................................

Ciasto kruche

3-4  ugotowane i schłodzone żółtka jajek (białka zostaw do wykorzystania do pasty)
1 surowe jajko
125 g średnio twardego masła
1 łyżka cukru
szczypta soli
1 kubek (250-300g) mąki pszennej

Pasta:

3-4 jaja ugotowane na twardo
1 nieduża cebula drobno pokrojona i trochę oleju do smażenia
czarny pieprz do przyprawienia
2-3 plastry wędzonego bekonu, drobno pokrojonego

Sposób wykonania:

Ciasto kruche:

Pokrusz ugotowane żółtka do miski i dodaj pokrojone masło.
Dodaj surowe jajko i wszystkie suche składniki.

Pasta:

Obierz jajka i pokrój je z grubsza do miski, użyj również białek z jajek użytych do ciasta. Usmaż bekon i cebulę na patelni aż do zbrązowienia, potem wrzuć wszystko do miski z jajkami. Zmiksuj wszystko uzywając blendera do uzyskania gładkiej masy.

Każdą "miseczkę" wypełnij do 3/4 głębokości pastą jajeczną.
Zamiast kokilek możesz użyć foremki do babeczek.
Piecz ok 8-10 minut razem z nadzieniem.

Smacznego!

Parmesan garnish idea // Pomysł na dekorację z parmezanu

To make this decoration I used fresh grated parmesan and chives', parsley's and coriander's leaves. First I placed some leaves on the piece of baking paper, I covered them with grated parmesan and warmed in the oven in 220^C for about 20-30 seconds until cheese was sizzling but it still kept it's moisture, then as soon as possible I rolled the paper with melted cheese together and pot to the fridge to chill. Afterwords I removed the paper carefully and stored the garnish in the sealed box.

.......... ............ .............. ............. ...........

Aby wykonać taką dekorację użyłam świeżo startego parmezanu oraz listków pietruszki, kolendry i szczypiorku. Najpierw ułożyłam listki na kawałku papieru do pieczenia, następnie przysypałam je serem i włożyłam na ok 20-30 sekund do piekarnika w temperaturze 220^C aż ser zaczął skwierczeć, wtedy najszybciej jak to możliwe zrolowałam papier razem z serem i włożyłam do lodówki do zastygnięcia. Potem tylko usunęłam delikatnie papier. Należy przechowywać w szczelnie zamkniętym pudełku.

Garlic&thyme potato fritters /// Czosnkowo - tymiankowe placki ziemniaczane

Garlic & Thyme Potato Fritters

Potato fritters are an alternative as a side instead of chips, potatoes or, served with a stew or meaty gravy may be a good idea for the main course. Also for vegetarians they're a great variety for their daily menu. My garlic and thyme fritters are the best with a spicy vegetable stew but they are also a creative veggie burger replacement.

Ingredients (for 6-8 fritters):

2-3 large potatoes
1 egg
Salt and pepper to seasoning
1 tbsp corn flour
1 tsp finely cut garlic(1 large or 2small cloves)
1 tbsp finely cut fresh thyme
Oil to frying

Method:

Peel the potatoes and grate them roughly. Add all ingredients and  mix them together. Heat the oil (1 cm deep) in the frying pan, when it is hot put 3-4 fritters on the pan, shape them with a tablespoon. Fry them to a brown colour on both of their sides. The fritters should be crunchy outside and soft inside.

Enjoy!

Czosnkowo - tymiankowe placki ziemniaczane

1 jajko
Sól i pieprz do smaku
1 łyżka mączki kukurydzianej (lub ziemniaczanej)
1 łyżeczka drobno posiekanego czosnku (1 duży lub 2 małe ząbki)
1 łyżka drobno posiekanego tymianku
Olej do smażenia

Placki powinny być chrupiące zewnątrz i miękkie w środku.

Smacznego!

Roast chicken under smoked bacon blanket /// Kurczak pieczony pod kołderką z wędzonego bekonu

Roast chicken under smoked bacon blanket

The most important thing is how to choose a really good free range chicken. The real free range chicken has a yellow "socks" and yellow tone skin on it's wings ends which it is neither pink nor white but yellow.
To evenly season the whole chicken you must season it on every side, also inside. The best way to prepare your homemade roast chicken seasoning is mixing all ingredients in the bowl but you must remember that table salt is heavier than herbs and spices and it is usual on the bottom of the bowl so that, in my opinion, this is safer to use the salt separately.

My favourite roast chicken seasoning:
1 tbsp of marjoram
1/2 tbsp of ground paprika
1/2 tbsp of sage or thyme
1/2 tbsp of basil
1/2 tsp of finely cut rosemary
1/2 tbsp of fresh ground black pepper
Salt as you like
The roast chicken which I present to you today is wrapped in smoked bacon which is salted so you must mind the salt coming from the bacon.

Chicken first was salted inside and outside, then it was rubbed with seasoning, also inside and outside, After that I wrapped each leg separately with slices of back bacon and breasts were covered with bacon too. Inside I stuffed the bird with whole chestnut mushrooms and 2 garlic cloves halved. On the roast tray around the chicken I put some baby potato halves and a few mushrooms.
I baked it covered with foil for 90 minutes in 200^C, for last 10-15 minutes you can take the foil away to make the skin crunchy.

enjoy!

.................. ............. ............. .............. ............... ................

Moja ulubiona przyprawa do kurczaka:

Potem owinęłam najpierw nóżki, a potem piersi plastrami bekonu. W środku nadziałam kurczaka brązowymi pieczarkami w całości i włożyłam do środka 2 przekrojone ząbki czosnku.

Smacznego!

How to make vanilla sugar /// Jak zrobić cukier waniliowy

Homemade vanilla sugar

Using vanilla pods to our baking we peel them and we use only their seeds but used vanilla pods we can store in the tightly sealed box or sealed jar with sugar and use this sugar instead of vanilla extract. To make the vanilla extract keep your vanilla pods in vodka or brandy.

Pudding chlebowo - maślany z żurawiną i białą czekoladą

Masło do posmarowania chleba
200g bialej czekolady w dropsach(czekolada do wypieków)
Słoik dżemu lub sosu żurawinowego (ok.150 ml)

Składniki na custard:

3 całe jajka
30g cukru
1 laska wanilii lub cukier wanilinowy
250ml mleka
250ml śmietany
2 płaskie łyżki stołowe mączki kukurydzianej albo ziemniaczanej

SPOSÓB WYKONANIA

1. Ubij jajka i zmiksuj z cukrem i z mąką
3. Dodaj gorące mleko ze śmietaną do  jajek, ciągle mieszając.
4. Przelej miksturę do garnka i doprowadź do wrzenia, intensywnie mieszając. Gotowy custard odstaw na bok.
5. Posmaruj wszystkie kromki chleba masłem i ułóż pierwszą warstwę chleba w kwadratowym lub prostokątnym naczyniu.
6. Posyp garścią czekolady i zalej 1/3 custardu
7. Ułóż kolejną warstwę chleba, posmaruj połową sosu żurawinowego, zalej kolejną 1/3 custardu
8. Powtórz to samo z ostatnią warstwą, dodając resztę czekolady.
9. Przykryj wszystko folia aluminiową. Wstaw naczynie do lodówki na 2-3 godziny, żeby chleb nasiąknął.

Chocolate fondant /// Czekoladowy fondant

This chocolate melted-in-the-middle pudding is a classic dessert but for some reason many people don't dare to make it. They found it too difficult. Today I would like to share with you my chocolate fondant recipe which I think is not so difficult.

Ingredients:

chocolate sauce:

  • 2 tbsp of dark cocoa
  • 3-4 tbsp of light brown demerara sugar + sugar to sprinkle ramekins
  • 60 g unsalted butter + some butter to spread ramekins
  • 50 ml double cream
and also:

  • 2 eggs
  • 2 tbsp of caster sugar
  • 1 tbsp of flour
  • icing sugar and some ice cream to serve

Method:
Hit the oven to 200*C and prepare your ramekins (or muffin tins) spreading them thickly with butter and then sprinkle them with sugar.
The butter, cocoa, sugar and cream cook slowly in a small saucepan, still stirring until smooth like a melted chocolate texture. Leave it on the side and whisk eggs with sugar but don't beat them, then add the flour and whisk them together. I prefer using hand whisker but you can make it with electric mixer on the slowest mode. When eggs, sugar and flour are combined, add slowly your made before chocolate sauce and slowly whisk until combined.
Fill the ramekins up and bake no longer than 8-9 minutes. Then take them off from the oven and wait for 1-2 minutes, then encircle every fondant with knife and take it of from the ramekin by putting it upside-down.
Fondants should be served warm, straight from the oven and they should be still outside and melted inside. The row dough mix you can store in the fridge up to 8 hours, but then you must bake it 1 minute longer than usual.

sos czekoladowy:

  • 2 łyżki ciemnego gorzkiego kakao
  • 3-4 łyżki brązowego cukru demerara + trochę do posypania foremek
  • 60 g masła + trochę do posmarowania foremek
  • 50 ml śmietany kremówki

oprócz tego:

  • 2 jajka
  • 2 łyżki drobnego cukru do pieczenia
  • 1 łyżki mąki
  • cukier puder i lody do zaserwowania :)

Sposób wykonania:
Rozgrzej piekarnik do 200*C i przygotuj kokilki (lub foremkę do mufinek) smarując każdą grubą warstwą masła i posypując cukrem.
Masło, kakao, brązowy cukier i śmietankę zagotuj w małym rondelku, ciągle mieszając, aż do uzyskania gładkiej masy o konsystencji roztopionej czekolady.
