Pecan and hazelnut nougatine topped with rum and chocolate ganache /// Nugatynki z orzechami pekan i laskowymi zwieńczona rumowo- czekoladowym ganache.

To make those nougatines I used Digestive biscuits, toffee caramel and crushed pecan and hazelnut nuts

Toffee caramel:

Ingredients:
100 g unsalted butter
Pinch of sea salt
3/4 cup brown sugar
1/3 cup white sugar
1/3 cup double cream
1/2 cup of water

handful of crushed pecan and hazelnuts

Method:

Bring sugars, salt and water to boil and add the cream and the butter. Keep the caramel on the moderate heat as long as it gets thick and theady, do not stir. When the caramel is getting thicker add the handful of crushed nuts and keep them in the boiling caramel for a while. The toffee caramel must be thick and sticky but not cristalised. Then, using two spoons, place on each biscuit some small amount of the nougatine and leave it do set.

Rum and chocolate ganache:

Ingredients:
Dark chocolate bar
1 tbs butter
50 ml double cream
2 teaspoons of rum or 1/2 tsp of rum flavour

Method:

Heat slowly all ingredients into the sauce pan stirring until smooth and leave on side to cool down to the room temperature. Top your nougatines with ganache, using spoon and let it leak down a bit.
Ready made nougatines store in the fridge.

Nugatynki z orzechami pekan i laskowymi zwieńczone rumowo - czekoladowym ganache.

Do zrobienia tych nugatynek użyłam gotowych herbatników digestive, karmelu toffi i skruszonych orzechów pekan i laskowych.

Karmel toffi (masa krówkowa)

Składniki:
100 g masła
Szczypta soli morskiej
3/4 kubka brązowego cukru
1/3 kubka cukru białego
1/3 kubka śmietany kremówki
1/2 kubka wody

Garść pokruszonych orzechów pekan i laskowych

sposób wykonania:

Zagotuj oba cukry z wodą i dodaj wtedy masło i śmietanę.

Rumowo-czekoladowe ganache:

Składniki:
Tabliczka ciemnej gorzkiej czekolady
1 łyżka masła
50 ml kremówki
2 łyżeczki rumu lub 1/2 łyżeczki aromatu rumowego

Sposób wykonania:

Umieść wszystkie składniki w małym rondelku i powoli podgrzewaj, mieszając, aż do uzyskania gładkiej masy.

Smacznego!

Pudding chlebowo - maślany z żurawiną i białą czekoladą

Masło do posmarowania chleba
200g bialej czekolady w dropsach(czekolada do wypieków)
Słoik dżemu lub sosu żurawinowego (ok.150 ml)

Składniki na custard:

3 całe jajka
30g cukru
1 laska wanilii lub cukier wanilinowy
250ml mleka
250ml śmietany
2 płaskie łyżki stołowe mączki kukurydzianej albo ziemniaczanej

SPOSÓB WYKONANIA

1. Ubij jajka i zmiksuj z cukrem i z mąką
3. Dodaj gorące mleko ze śmietaną do  jajek, ciągle mieszając.
4. Przelej miksturę do garnka i doprowadź do wrzenia, intensywnie mieszając. Gotowy custard odstaw na bok.
5. Posmaruj wszystkie kromki chleba masłem i ułóż pierwszą warstwę chleba w kwadratowym lub prostokątnym naczyniu.
6. Posyp garścią czekolady i zalej 1/3 custardu
7. Ułóż kolejną warstwę chleba, posmaruj połową sosu żurawinowego, zalej kolejną 1/3 custardu
8. Powtórz to samo z ostatnią warstwą, dodając resztę czekolady.
9. Przykryj wszystko folia aluminiową. Wstaw naczynie do lodówki na 2-3 godziny, żeby chleb nasiąknął.

Sponge cake "omelette" tower with lemon cream // Wieża omletowa z kremem cytrynowym

Basically the cake called "omelette" should look like this:

But you don't have to do everything with the same way - the sponge omelettes you can use as a layers to make this nice looking cake. So lets go creative!

To bake my omelettes I use this the basic sponge cake recipe reducing ingredients of half. On the baking paper make the round shapes about 10-15 cm diameter and bake it no longer than 7-8 minutes. If you want to make folded-up "omelettes" you must fold them immediately after baking as they're still hot and flexible. If they hardened you cannot fold them anymore so then you can make omelette tower 😉

Cream ingredients:
2 egg yolks
2 tbs of sugar
1 tsp of grated lemon zest
1/2 lemon juice
1 vanilla bean
250 ml of mascarpone cheese
200 g fresh raspberries
1-2 tbsp icing sugar for sprinkle
To scrape the seeds from vanilla bean you must cut it along and peel the two sides of vanilla bean outward with the side of the blade.

Method:
Whisk yolks with sugar until smooth, add vanilla, lemon zest and then gradually add mascarpone cheese. When all ingredients are combined, add the juice from a half of lemon and mix all together.
Layer the omelettes and cream one by one, add some raspberries and top everything with sprinkle of icing sugar.

---------------------------------------------------------------------------------

1 laska wanilii
250 ml mascarpone
200 g świeżych malin
cukier puder do dekoracji
Żeby uzyskać same nasionka z laski wanilii, należy naciąć ją wzdłuż ostrym nożem i wyskrobać ze środka nasionka za pomocą tępej strony noża.

Metoda wykonania:

Tiramisu - the cake you don't need to bake

Tiramisu is a traditional Italian dessert made from ladyfingers soaked in strong coffee, layered with mascarpone, eggs and amaretto mixture. There is many adaptations of this dessert like a strawberry or cocoa Tiramisu but today I would like to introduce my favourite recipe - traditional tiramisu.

Ingredients:
2 pack of ladyfingers (sponge fingers)
2 x 250 g of mascarpone cheese
4 egg yolks
2 tbsp of sugar
50 ml amaretto or 1 tsp of amaretto flavour
200 - 250 ml strong coffee (like espresso)
1 tbsp of cocoa to sprinkle

Method:
Whisk yolks with sugar until smooth, add amaretto, then slowly add mascarpone and mix until combined. Prepare square or rectangular dish and place on it's bottom the first layer of ladyfingers tightly side by side. Soak them with coffee and cover with the cream. Put another layer of ladyfingers, repeat all again and again. The last layer must be a cream. Top your dessert with cocoa using a small sieve. Put your dish to the fridge and leave it for a couple of hours, let all ingredients to merge each other.

Tiramisu to tradycyjny włoski deser zrobiony z paluszków biszkoptowych umoczonych w mocnej kawie i przekładanych warstwami z kremem zrobionym z mascarpone, jajek i amaretto. Istnieje wiele wersji tiramisu, jak np tiramisu truskawkowe albo kakaowe, ale dziś chciałabym Wam zaprezentować mój ulubiony przepis na tradycyjne tiramisu.

Składniki:
2 paczki paluszków biszkoptowych
2 x 250 g sera mascarpone
4 żółtka
2 łyżki cukru
50 ml amaretto lub kilka kropel aromatu arakowego
200 - 250 ml mocnej kawy (jak espresso)
1 łyżka kakao do posypania

Sposób wykonania:
Zmiksuj żółtka z cukrem do białości, dodaj amaretto (lub aromat), potem powoli dodawaj mascarpone i miksuj do uzyskania gładkiej masy. Przygotuj kwadratowe lub prostokątne naczynie i ułóż pierwszą warstwę biszkoptów, nasącz je kawą za pomocą łyżki, następnie połóż warstwę kremu, powtórz wszystko aż do wyczerpania biszkoptów, pozostawiając krem do pokrycia wszystkiego na wierzchu. Posyp gotowy deser kakao, używając małego sitka. Włóż naczynie na kilka godzin do lodówki i pozwól, by się wszystko nasączyło.

Puff Muddle /// Francuski poplątaniec

I had a block of ready puff pastry and after making several circular pastry parcels I had left quite a lot of scraps and actually had no idea what to do with them. I really do not like wasting food but kneading puff pastry is not a good idea! I just put them altogether and baked for 15 minutes in 190"C.
On the pic below you can see an effect.

It was nothing else but some strawberry, a fruit coulis and sprinkle all with a bit of icing sugar. Looks cool and was very tasty

Choux Pastry // Ciasto ptysiowe

Choux pastry is the lightest, crispiest, airiest pastry, which can be used to make profiteroles, éclairs or savoury gougères. It puffs up in the oven until it is eventually set by the heat.
This choux pastry recipe is based on proportions between water and flour - it has to be the same amount so you actually do not need to weigh your ingredients, only measuring them with 250ml cup.
So we need:

  • cup of water
  • cup of plain flour
  • pinch of salt
  • teaspoon of caster sugar if you are making sweet pastry or seasoning and salt if you are making a savour ones
  • 1/3 of block (80g) unsalted butter
  • 4 large free range eggs
Line a tray with baking paper. You can grease and moisture the paper with mix of water and oil (use silicone brush) which makes it settled firmly on the tray.
Pour the water to the medium-size saucepan, add butter and salt (or sugar, or seasoning) and put it over moderate heat until boiling. Then take the saucepan to the side and add all the flour mixing the dough vigorously with wooden spoon. You will get after a minute a large smooth dough ball which leaves the sides of saucepan clean. Place your dough to the mixer bowl and wait for it to cool down to room temperature then break into all 4 eggs and whisk your mixture for about 4-6 minutes as long as it is smooth and glossy.
To make small choux pastry buns like profiteroles you can use teaspoons. To prepare eclairs use piping bag with piper to make them thumb thickness and about 10cm long. Leave about 1,5cm between them.
Bake in 200*C (fan) or 210*C oven for 25 minutes*.

*If you make tiny choux pastry peas to the French-style soup you will need piping bag and make little "rain drops", then you will bake them for 10-12 minutes only

  • Kubek wody
  • kubek mąki zwykłej pszennej (ja używam typ 500)
  • szczypta soli (zawsze, nawet do słodkich ciast)
  • Łyżeczka cukru jeśli robisz słodkie ciasto, sól i przyprawy wg uznania jeśli wytrawne
  • 1/3 kostki masła (80g) - osobiście preferuję masło jako zdrowsze niż margaryna
  • 4 duże jaja z wolnego wybiegu
Wyłóż blachę papierem do pieczenia, możesz go trochę zwilżyć pędzlem z wodą i olejem, wtedy ładnie przylega.
Przełóż ciasto do miski miksera i poczekaj aż ostygnie do temp. pokojowej. Wtedy wbij wszystkie jaja i miksuj 4-6 minut aż do uzyskania gładkiej, szklistej i jednolitej masy.
Jeśli chcesz zrobić małe profiterolki, możesz użyć łyżeczki do herbaty do nakładania, jednak do ptysiów i eklerek będziesz potrzebować rękawa cukierniczego z kształtką do dozowania.

Basic sponge cake // podstawowy biszkopt

This sponge cake is a base of most tasty cakes, especially birthday ones, also we use it to make roulades. You can make it in different shapes and thickness depending on it's purpose.
My basic recipe is very simple and easy. Just follow it and you can make the softest and tasty sponge cake :)
Ingredients:
4 large free range eggs
100g (about 1/2 cub) of caster sugar
4 tablespoons of plain flour
1 tablespoon of potato starch or corn flour
1 flat teaspoon of baking powder
Heat the oven to 180^C, grease and line the tin
Break all the eggs into the bowl and whisk them with a mixer for a while untill they're fluffy and then add the sugar gradually still mixing until pale. Switch off the mixer and sieve the flours combined with baking sugar. Mix all ingredients gently until they combined and fill the tin using a spatula to remove all the mixture from the bowl. Place the tin in the oven as soon as possible and bake for 25 minutes. Do not open the oven until baked!
If you used a round shaped tin your cake may need longer time to be baked, so check it by lancing with wooden skewer and bake until the skewer is dry.

Biszkopt to podstawa większości smacznych ciast, zwłaszcza tortów urodzinowych, używamy go także do rolad. Można go piec w różnych kształtach i grubościach w zależności od przeznaczenia.
100g (około 1/2 kubka) cukru pudru (albo drobnego cukru typu caster)
4 łyżki mąki
1 łyżka skrobii ziemniaczanej lub kukurydzianej
1 płaska łyżeczka proszku do pieczenia
Rozgrzej piekarnik do 180 ^ C, nasmaruj blachę i wyłóż papierem
Wbij wszystkie jajka do miski i ubijaj je miserem przez chwilę aż będą puszyste, a następnie stopniowo dodawaj cukier  ciągle mieszając aż do białości. Wyłącz mikser i przesiej mąki w połączeniu z proszkiem do pieczenia.
